When I did fairs & festivals, I didn’t get a lot of interest in seasonal flavors. For example, the first cranberry festival we did, I made three trays of Cranberry Nut Fudge and it took a while to sell. So, the following year, I bought the Cranberry Nut banner and made nine trays of Cranberry Nut Fudge. I sold out the very first day and had nothing left for the second day. We actually bought an additional five lbs. of cranberries and made 12 more trays.
