How To: Mix nuts and more into fudge
Make Rocky Road, Chocolate Walnut, Chocolate Pecan and other favorites.
There are two methods of adding in ingredients when making fudge. Use the mixing bowl when adding in nuts and candy pieces and the push-in method when adding mini-marshmallows to the surface.

Pour fudge from the kettle into a mixing bowl.
Add 2 tablespoons of water. This is important because added ingredients will absorb moisture from the fudge.
Thoroughly blend in the water.
Per the recipe, add in nuts and/or chunks of candy and mix thoroughly.
Use the scraper to guide the fudge into the pan and smooth the surface.
Another way to add-in ingredients, such as mini-marshmallows, is by sprinkling the appropriate amount according to the recipe over the surface of the fudge.
Push the marshmallows into the fudge.
Be sure to cover them completely so they don’t dry out.
