Use the horizontal and vertical scoring grids to create a tray of 24 quarter-pound (4 oz.) fudge pieces.
Place a scoring grid on the fudge.
Press gently as you run a plastic knife along the grid’s lines.
Remove the first grid and replace it with the second one.
Gently pull the plastic knife along the grid’s lines.
A six-pound tray will yield 24 pieces of 4-oz. fudge pieces.
Make sure your fudge looks good every time you remove it from the pan.
